Keto pizza!
To begin with a small proviso, I just want to say this: a lot of what we think we know about standard nutrition and eating is wrong. Our ideas of what components "must" be part of a meal are skewed by misinformation and our own lifelong habits of what we're used to. A lot of what this process has been about, for me, is re-learning a new way of eating and of thinking about what constitutes a proper, satisfying meal, and how much of it there needs to be. To that end, I'm more interested in learning new ways of seeing meals than in learning how to replace things I used to eat with other versions of them. What I mean by that is, instead of eating ketogenic versions of bread, etc, I would rather learn a new way of structuring meals altogether.
That said, this pizza is a very fine substitute! It's called Fat Head pizza, named for a documentary of the same name, but these days there are multiple versions of this recipe around. I used this one:
- Take 3/4 cup of shredded mozzarella (full fat!) and mix it with 2/3 cup of almond flour.
- Add 2 tbsp of cream cheese (not whipped) and microwave it for a minute.
- Stir it and microwave it for another 30 seconds.
- Now add an egg, a pinch of salt, a dash of garlic powder, a healthy pinch of dried oregano and dried basil, and if you like, a little bit of dried rosemary.
- Mix this together, then put the dough onto a sheet of parchment paper. Put another sheet on top and roll it into a basic pizza shape (circular or square, whatever you like).
- Bake it for 12-15 minutes at 425 F. It should be brown and very sizzly.
- Take it out, remove the top sheet of parchment, carefully flip it over onto a new sheet of parchment, take the (formerly) bottom layer off, and bake it for another 5 minutes.
- Then take it out, brush pizza sauce onto it, add as much shredded mozzarella as you like, and whatever toppings you like.
- Sprinkle some more oregano on it and bake it until the cheese melts (about another 5 minutes).
This one is customized to the preferences of the three people who ate it! Pepperoni and mushrooms on 2/3, and pepperoni and tomato on the other 1/3. Plus we added a bit of cheddar. It was gooood! I've tried a couple of cauliflower pizza crusts before, and they were pretty good, but also fell apart quite easily. This one is solid, easy to hold in your hands, didn't fall apart at all, and was nice and crispy. Absolutely delicious, 10/10 will make it again! Also, at 4 net carbs per slice (not counting toppings), how can you go wrong?
